Fraser’s Fantastic Banana Cake

One of the real joys of staying in a chalet is coming back after a day on the slopes to a wonderful afternoon tea.  Fraser, the chef in Chalet Trois Ours makes a fantastic banana cake – deliciously moist and wonderfully bananary ! Here is the recipe so you can try this at home although you really should earn the treat by skiing several runs first.  You will need:

  • 110 gms butter
  • 170 gms sugar
  • 220 gms self-raising flour
  • 2 large eggs (beaten)
  • 2/3 over ripe bananas
  • Loaf tin
  • Pinch of salt
  • 2 tablespoons water

Line the loaf tin with greaseproof paper & pre-heat the oven to 180 C Cream the butter & sugar then add the eggs, one at a time and beating between additions Mash the bananas and beat into the mixture Fold in the flour and salt – add water if necessary to achieve a dropping consistency Pour into lined tin & bakein the middle of the oven for 35-40 minutes. Test with skewer which should come out clean Cool, decorate and enjoy ! Fraser's Banana Cake
